Travel To The Mediterranean By Cooking Chicken Feta Pasta At Home

I love traveling toEurope!

During my first visit to the continent I traveled for 5 months by train and plane. I had the opportunity to eat my way through Ireland, Scotland, England, Wales, Portugal, Spain, Belgium, Holland, Luxembourg, Iceland, Denmark, Norway, Sweden, Finland, Russia, Estonia, Latvia, Poland, Czech Republic, Germany, Austria, Switzerland, Lichtenstein, Croatia, Bosnia, Hungary, Romania, Slovakia, Greece, Turkey, France, Malta and Italy.

I’ve traveled to many countries in the Mediterranean. I always love revisiting the region to get a taste of nutritious ingredients like freshly pressed golden olive oil, plump olives, juicy lemons and fresh feta cheese.

This recipe is inspired by my love for Mediterranean cuisine, tossing al dente pasta with a selection of ingredients commonly used in kitchens in Italy and Greece.

Mediterranean Ingredient Substitutions

This pasta recipe is very versatile. You can easily swap out ingredients and make substitutions based on your flavour preferences or what you have available in your fridge or kitchen cupboards.

  • Olives: the cornerstone of Mediterranean cooking (used for both its oil and fleshy fruit). Plump green, black or kalamata olives are a lovely addition to this pasta.
  • Legumes: add additional protein to a pasta sauce by adding cooked chickpeas or cannellini beans.
  • Artichokes: canned artichokes are vinegary and add a lovely flavour and texture to pasta.
  • Capers: similar to olives, capers add a salty flavour to recipes. Fry them in oil to make them crispy they make a great garnish.
  • Eggplant: this classic Mediterranean vegetable is best enjoyed fried until crispy and added to a pasta moments before serving.
  • Zucchini: tossed in olive oil and sautéed until tender this humble vegetable adds a pop of yellow or green colour to pasta dishes. You can also stuff zucchini flowers with ricotta and deep fry them and use as an impressive garnish perched on top of each bowl.

Directions

Follow our step-by-step recipe and you’ll have a crowd-pleasing pasta dinner on the table ready to eat in under 1 hour.

  1. Bring a large pot of salted water to boil and cook the pasta al dente according to the instructions on the package. Reserve 1-2 cups of pasta water before draining.
  2. Meanwhile, heat the oilin a large skillet and melt the butter in it. Add the chicken breast slices and cook over medium heat for 4-5 minutes until slightly golden.
  3. Stir in the garlic and sweet paprika and continue to cook for another minute until fragrant.
  4. Add the dry sherry to deglaze the pot and cook for 1-2 minutes, stirring occasionally, until most of the alcohol evaporates.
  5. Stir in the tomato paste,cream cheese and 1 cup of the reserved pasta water. Stir to combine and allow the sauce to simmer for 2 minutes.
  6. Add the oregano and crumbled feta cheese and stir to combine.
  7. Allow the sauce to simmer for 2 minutes, then toss in the cooked pasta. Toss well until the pasta is covered in sauce, adding a dash of pasta water if it looks too thick.
  8. Stir in the sun-dried tomatoes and season with freshly ground pepper.
  9. Garnish with basil leaves and crumbled feta cheese. Serve hot.

This mouth-watering Chicken and Feta Pasta recipe is quick & easy to make at home. Here are some tips and tricks to get you started.

  • Use a large pot or Dutch Oven to cook the noodles so they are fully submerged in the boiling salt water. This will ensure they cook evenly and don’t stick together.
  • We like to use spaghetti in this recipe but you can substitue with other long and slender pasta varieties like spaghettini, linguini, bucatini, fettuccine or tagliatelle. Penne and rigatoni also work well as the interiors hold the sauce well.
  • We like to use thinly sliced chicken breast in this pasta dish as they cook quickly and are delightfully tender. You can substitue with fattier chicken thighs, which offer additional flavour.
  • A vegetarian version of this pasta can be prepared if you omit the chicken and replace with cooked chickpeas.
  • We like to add flavour to the dish by adding a few glugs of fortified wine like dry sherry but you can substitute with a dry white wine like riesling or sauvignon blanc if you prefer.

  • 300 g Pasta
  • 1 tbsp Olive Oil
  • 1 tbsp Unsalted Butter
  • 450 g Chicken Breasts sliced
  • 4 Garlic Cloves minced
  • 1/4 tsp Sweet Paprika
  • 1/3 cup Dry Sherry or White Wine
  • 2 tbsp Tomato Paste
  • 100 g Cream Cheese
  • 1/2 tsp Dried Oregano
  • 100 g Feta Cheese
  • 75 g Sun Dried Tomatoes
  • 1/4 cup Fresh Basil finely chopped
  • Black Pepper to taste

Instructions

  • Bring a large pot of salted water to boil and cook the pasta al dente according to the instructions on the package. Reserve 1-2 cups of pasta water before draining.

  • Add the dry sherry to deglaze the pot and cook for 1-2 minutes, stirring occasionally, until most of the alcohol evaporates.

  • Stir in the tomato paste, cream cheese and 1 cup of the reserved pasta water. Stir to combine and allow the sauce to simmer for 2 minutes.

  • Add the oregano and crumbled feta cheese and stir to combine.

  • Allow the sauce to simmer for 2 minutes, then toss in the cooked pasta. Toss well until the pasta is covered in sauce, adding a dash of pasta water if it looks too thick.

  • Stir in the sun-dried tomatoes and season with freshly ground pepper.

  • Garnish with basil leaves and crumbled feta cheese. Serve hot.
